How long do i fry turkey mince mince for?

i am making mash potato and fresh carrots and gravy. i'm not sure how long to fry turkey mince for. do you put it on high then when change colour simmer? and for how long? since the potatoes and carrots will take twenty mins and i don't want meat ready before the veg thanks
